Break the eggs, separating the yolks from the whites. Beat the yolks with the sugar until you have a white and foamy cream.
When the chocolate is melted, add the Port and the butter (softened, of course). Beat well, then add the sugar-egg yolk mixture, and the orange peel, if using.
Now beat the whites until they form stiff peaks then bold into the chocolate mixture.
Pour into a serving bowl and chill for at least half a day.
Remove from the fridge half an hour before eating.

Chocolate mousse with orange

Preparation time: 15 minutes Cooking time: 10 minutes I prefer to leave out the orange peel. This is, for me, the most wonderful chocolate mousse ever!
Ingredients
300 g superior chocolate,6 eggs,80 g butter,05 dl Port,2 tablespoons orange juice,2 tablespoons caster sugar,125 g crystalized orange peel cut up very finely (optional)
Method
Break the chocolate up on small pieces, put it in a bowl with the orange juice and melt (whichever method you prefer).Break the eggs, separating the yolks from the whites. Beat the yolks with the sugar until you have a white and foamy cream.
