1 Prepare a 2 pint pyrex dish by buttering or oiling.
2 Sieve flour and cocoa powder into a large mixing bowl.
3 Add all remaining ingreedients and beat thoroughly for 2 minutes.
4 Pour into prepared dish.
Make the sauce and topping
5 Mix together cocoa powder, nuts and half of the sugar. Sprinkle over pudding.
6 Make up coffee in a pint measure, sweeten with remaining sugar.
7 Pour over pudding.
8 Bake at 180 degrees c, gas 4, for 50 - 60 minutes.

Chocolate Up And Over Pudding

A delicious chocolate pudding that makes it's own gooey abd fudgy sauce, during cooking the cooking the sponge rises up over the sauce. Occassionally I serve it warm with whipped double cream for an added touch of decandence. Ice Cream is quite good too.
Ingredients
For the pudding,4oz soft margarine,4oz granulated sugar,2 large eggs,3oz self raising flour,1 level tablespon cocoa powder,,For the sauce ,1 level tablespoon cocoa powder,2oz demerara sugar,3 heaped teaspoons instant coffee powder,1/2 pint hot water,,For the topping,2oz demerara sugar,1 1/2oz chopped nuts,1 tablespoon cocoa powder, ,
