Chilled Lemon Flan

A simple dessert, good enough to serve at a dinner party.
Ingredients
120g digestive biscuits crushed. 60g butter. 1 tabsp caster sugar. 150ml double cream. 170g (ish) condensed milk. 2 large lemons.
Method
Melt butter and mix in crumbs and sugar. Spread in a 7 inch pie dish and up the sides. Chill. Mix cream,condensed milk and grated lemon rind. Add lemon juice. Beat well Pour into flan and chill well.
