Cheesy Apple Tart
This recipe uses a fast and easy method for a biscuit/ pastry base. Make sure the cream cheese is soft before using to prevent lumps in the mixture.
This tart is good cold or warm with vanilla ice cream.
Ingredients
For the crust:
4oz butter
3oz sugar
1/2 teasp. vanilla extract
5oz plain flour
For the cream fillling:
8oz cream cheese, softened
2oz sugar
1 egg
1/2 teasp. vanilla extract
For the top:
3 apples, peeled and sliced
1/2 teasp. cinnamon
2oz sugar
2oz halved almonds or chopped walnuts
Method
Preheat the oven to 400`F
Make the crust: Cream the butter and sugar. Stir in the vanilla. Mix in the flour to make a smooth dough. Press into the bottom of an 9" fluted, removable bottom tart pan, giving it about a 1" rim. Bake for approx 15 mins or until lightly golden. Remove the tart shell from the oven.
While the crust bakes, beat together the cream cheese, egg, sugar and vanilla for the cream filling until smooth. Make the topping by tossing the apple slices with the cinnamon and sugar.
Spread the cream cheese mixture into the tart shell. Arrange the apple slices on top attractively, then finally sprinkle the nuts over the top. Bake until the apples are tender and golden, about 40 mins.
