Cheesecake

Sometimes I serve this with Fruits of the Forest, but mostly just with single cream
Ingredients
14 Digestive Biscuits crushed,11/2 oz butter,12oz Cottage Cheese,1 tsp lemon juice,1 tsp grated lemon rind,2 eggs,4oz sugar,2 tsp vanilla essence,Topping:-,1 carton soured cream ),1 1/2 oz sugar ) Mixed Together,1 tsp vanilla essence ),,
Method
Melt butter and add crushed biscuits. line the base of a dish with mixture and put in fridge to set. Meanwhile liquidise ingredients then pour onto biscuit base. Set in oven at 180C for 25-30 mins. Leave to cool for 5 mins. Spoon over topping mixture and return to oven for 10 mins. Cool and leave in fridge overnight.Recipe images are not uploaded yet.
