Cat's Raspberry Marshmallow Delight

An extremely easy and tasty dessert. I usually do double quantities if there are more than 3-4 people.



1 Bag of Marshmallows,1 Punnet of Raspberries (or 400g tin), 300ml/Half pint of double cream


If the marshmallows are large, cut them in half. Stir the marshmallows into the fruit and leave in the fridge overnight. If you are using canned fruit, do not use all of the juice as otherwise it will be too runny. You want it so that the juice is soaked into the marshmallows but will just about slide when tipping the bowl. Whisk up the double cream and stir it into the mix. Pop it back into the fridge for a couple of hours and serve when required.
