Cat's Coffee Cake

A friend who I write a blog with, shared this recipe with me, which I've made quite a few times since

 
 
 
 

Ingredients

Cake:, Ingredients:, 175g white sugar, 175g butter, 175g self raising flour, 3 eggs (beaten), 1 tsp vanilla essence, , Filling:, 1/2 cup milk, 1 tsp brandy, 1 cup brown sugar, Half pint cream, 1 tsp coffee,

Method

Cake: Beat sugar & butter together. Add in vanilla essence and eggs. Fold in the flour. Pour into cake tin (I grease and line mine with baking paper). Bake at 190 degrees for approximately 40-45 minutes. I use a skewer to check that it's cooked through. If not, then I chuck it back in the oven for another 5-7 minutes at 180 degrees (my oven is rather temperamental). Filling: When the cake is cooled down, Mix brandy and milk together and spoon over the bottom half of the sponge. Leave for minimum of 10 mins. This can be done night before. Beat together the brown sugar, the cream and the coffee until it becomes thick and creamy........like a soft icing. Spread some over bottom layer, put other half on top and cover the whole cake with the rest........down the sides too. Cover with chopped nuts. Enjoy :)
