Bread pudding

You can use any combination of fruits -currants, cherries even cranberiies Mixture doubles really well !



12oz breadcrumbs,3oz raisins,3oz sultanas,40z dark muscovado sugar,2tsp mixed spice,1/2 tsp ground ginger,1/4 pint milk,3oz melted butter,1 egg beaten,


Mix all the dry ingredients together
Add milk till soft. The amount of milk depends on the freshness of the bread. if a bit stale you may need more. If you add too much milk by mistake just add more breadcrumbs
Add melted butter and egg and mix well
Transfer to a greased baking tin - 11 X 7 and bake 180'C for about 45 mins. (less if you have a fan oven)The top should be slightly crunchy
Sprinkle with caster sugar and cut with a sharp knife whilst still hot
Leave in tin to cool down covered with a tea towel
