This is a yummy dessert and very easy to make. The recipe says put all in one bowl but I tend to make individual ones in sundae glasses. Usually enough for 4-5 servings.
MethodPlace half blueberries in pan with caster sugar and 4 tbsp cold water. Bring to the boil then simmer for 5 mins until berries start to break down. Remove from heat and press thru a fine sieve into a bowl to make coulis. Leave to cool. Whip cream until just beginning to thicken. Carefully fold in the yogurt dessert, icing sugar, meringues and remaining blueberries, reserving some for decoration. Spoon a third of mixture into serving bowl, drizzle with tablespoon of coulis. Repeat twice finishing with layer of cream. Decorate with remainder of berries and more coulis.
