Bajan summer cream

This is a caribean twist on the Eton mess, it is simple and quick to prepare and is great to have with that summer BBQ. The recipe will serve 4 to 6 people
Ingredients
500Ml whipping cream
3 peeled and sliced bananas
Juice and zest of 1 lime
3 table spoons of Coconut liqueur
100 Ml of Coconut milk
4 ready made meringue nests(crushed into small chunks
Pineapple or Mango slices for garnish (1 per servong)
Method
1. Whip cream to stiff peak stage 2. Fold in Coconut milk, liqueur and lime juice 3. Fold in sliced bananas and crushed meringue. 4. Serve with slice of mango or pineapple.Recipe images are not uploaded yet.
