Annie's JC Cheesecake

Serve with segments of tinned mandarines to garnish or just on it's own. Photo in gallery



200 grms digestive biscuits,170 grms. butter,300 grms cream cheese (Philadephia).,250 grms. mascarpone,284 grms. double cream,2 oranges,1½ tablespoons icing sugar,1 bar 85% chocolate (I buy mine from Lidyl)., 6 ozs butter,,


Melt the butter in a large saucepan, mix in the biscuits an d and press into pre-greased loose bottomed 8 inch tin and set aside.
Mix cream cheese and mascarpone in a large bowl and add sugar plus the zest of the oranges and orange juice.
Whisk cream to point of semi-solid, and fold into cheese mixture.
Transfer mixture into tin, cover with clingfilm and place in refridgerator for at least 2 hours.
When cooled, add chocolate and butter to a heatproof dish and microwave for 45 seconds, mix chocolate and butter mixture and set aside to cool.
When cool, add chocolate mixture to cheesecake and return to fridge for at least 2 hours.
When ready to serve, heat a knife with hot water and loosen around edges of cheesecake to assist in turning it out.
