After Eight Lime and Mint Posset

405g tin Carnation Light condensed milk

150ml double cream

4 limes, zested and juiced (about 150ml juice)

6 After Eight mints cut into strips

To Serve

reserve some After Eight mints cut in half diagonally.


Whisk the condensed milk and cream until thick.

Add the lime zest and juice and continue whisking until it thickens

Pour or spoon half of the mixture into 6 glass dishes.

Place the shredded After Eights on top and place the remaining mixture into the glasses until full.

Chill for a hour.

When ready to serve place the After Eight halves on top and serve.
