After Dinner Mint Cream

Ingredients

250g mascarpone, 300ml double cream, 2-3 tablespoon caster sugar, 2-3 tablespoon cream sherry, 200g thin After Dinner mint chocolates, broken into small pieces, Plus 6 extra to serve.

Method

Put the Mascarpone, cream, sugar and sherry into a bowl and whisk until it just comes to hold its shape. Add the chocolate mints and stir into the cream mixture. Spoon into glass bowls and serve with the whole dinner mint.
