4 EGGS, SEPARATED WITH WHITES RESERVED
225G CASTER SUGAR
2 TSP CORNFLOWER, SIFTED
1 TSP WHITE WINE VINEGAR
FOR THE TOPPING:
200 ML DOUBLE CREAM
SEEDS FROM VANILLA POD
250 G KIWI FRUIT PEELED

This recipe can be made with various fruits - apricot or peach slices go well with the light batter-y consistency of the clafoutis.
