I make this bread all the time. If you want to make it into a grained bread, just add 3 tablespoons of 9 grain mix, which is available in health food stores.
I adored bread pudding as a child and having tried and tested my mum's recipe I'm pleased to say it's as good as I remember!

This recipe evolved over many months because it panders to OH's taste buds.
These really are yummy....breakfast in a bar..... I use Scotts porridge oats, desiccated coconut and could not find unsalted peanuts, so used salted....
Really nice muffins that keep well in the freezer and can be reheated from frozen as and when required. Great for serving when friends stay over
prep time 5 mins cooking time 5 mins serves 4 Brushetta is delicious served with many different italian dishes ,especially soup and fish .It is a very useful accompaniment as the bread does not have to be fresh.
My two boys have always called them this, they are Butterfly cakes and they like these done in muffin tins which makes giant butterfly cakes!
These are like shortbread but much lighter, and they just melt in your mouth. At christmas you can add a pinch of cinnamon too.
