cheese and tomato muffins see photo gallery

This makes 6 to 8 muffins. Just eat 'em warm see them in the photo gallery



Ingredients,225g plain flour; ,1Tbsp baking powder; ,½ tsp celery salt; ,fresh ground black pepper; ,50g Taleggio cheese; ,50g cheddar cheese; ,60g black olives chopped; ,90g mi-cuit tomatoes chopped; ,1Tbsp chopped parsley; ,30g butter; ,250ml milk; ,1 large egg; ,30g roast onion flakes;


Oven at Reg 7, 220 C

Sift flour, salt, baking powder and pepper into a large bowl. Chop the cheese into small pieces and reserve a little for the top of the muffins.
Pat the olives dry and add to the flour with the cheese, parsley and tomatoes. Mix well.
Melt the butter in the microwave, mix with the milk and beaten egg and pour into the flour mixture. Mix briefly and divide into muffin cases. Top with the reserved cheese and the onion flakes. Bake for 18 to 20 minutes.
