These are like shortbread but much lighter, and they just melt in your mouth. At christmas you can add a pinch of cinnamon too.
Method1. preheat oven to 160c or 150c for fan. 2. beat together butter & icing sugar. 3. gradually beat in cornflour & flour. 4. use a teaspoon to shape the mixture into small balls. 5. use a fork to lightly press onto the top to flatten the ball slightly. 6. bake in oven for 15 - 20 minutes
