barbara's sponge creams (savoys)

after many years of buying savoys from bakery, now costing 80p each. decided to try making my own and  found it very simple



4 oz soft tub margerine ( i use flora)

4 oz caster sugar

4 oz self raising flour

2 eggs

 1 teaspoon baking powder

carton of double cream


place all ingredients into bowl

beat with electric hand mixer for 1 min

place mixture in teaspoons spaces between on greased baking sheet or sheet with nonstick liner try to make into even numbers

bake at 180oC OF 150oF for 5 mins less or more depends on oven, keep watching till light brown

cool on cooling tray

turn over sponges and add a small amount of raspberry or strawberry desert sauce or jam  on half of them, on the other half whip double cream and put in piping bag pipe on and sandwich together, dust with icing sugar
