Tiger Bread Topping

Use this topping to transform your ordinary loaf into "Tiger Bread" The sesame oil gives a nice nutty flavour and the rice flour cracks to make an unusual pattern on top of your bread
Ingredients
1+1/2 tsp Yeast
65ml warm water (you may need a little more)
1tsp sugar
1+1/2 tsp sesame oil
60g rice flour
Method
First of all make the Topping:- Mix together flour, salt, and yeast (if using fast action yeast.) Stir the sesame oil into the warm water/sugar(if using live yeast mix in with this) mix well. Pour the liquid slowly into the flour, stirring constantly until well combined. When your bread dough is ready (after the initial proving and knocking back) flatten the risen dough with your hand and place on a greased baking sheet. Coat the surface of the bread with the Tiger Paste and leave to prove again for a further 30 mins. Cook the Bread for 10 mins at 240c then turn down the oven to 200c. Cook the Bread for a further 10 mins at 200c. Tap the bottom of the bread, if it sounds hollow then the bread is cooked. Leave to cool on a wire rackRecipe images are not uploaded yet.
