Sponge cake for wedding cakes

285 gms butter or margarine (softened). ,320gms caster sugar. ,285 gms eggs (weigh without shells). ,285gms fine sponge flour.,2 ½ tablespoons water.,1tbls vanilla extract.,


Set oven 150C
Line the bottom and sides of an 8 round tin with parchment paper.
Put all the ingredients in a bowl and mix on a slow speed until the ingredients have combined then increase the speed gradually and beat for a couple of minutes until you have a smooth creamy mixture.
Pour the mixture into the prepared cake tin and bake for approx 1.25 hours or when tested for doneness.
