Beat together 2 eggs 1 teaspoon vanilla , and 1 cup castor sugar until pale and fluffy.
Sift three times, then fold in 1 cup self raising flour , 1/2 teaspoon salt.
Broing to boil and add immediatley, 1/2 cup milk and 1 dessert spoon of butter
Put the mixture into prepared pasn and immediatley hurry it to the oven. Bake 20-30 minutes, and whilst it is cooking-
mix together 3/4 cup brown sugar
1 cup dessicated coconut, and 1 cup cream/
When cake is cooked, remove from the ove, leave in the pan and spread the coconit mixture over the top.
Put it under a hot griller for a few minutes until the top turns golden brown.
Leave for at leats 5 min. before removing from the pan.
keeps well if it gets a chance.
