Lincolnshire Plum Bread

My OH loves this with butter on but I think it's fine without. Keeps very well too, just wrapped in tin foil.



1lb Mixed Fruit,8oz Margarine,8oz Sugar,1 Cup Water,1lb Self Raising Flour,2 Beaten Eggs,


Put mixed fruit, margarine, sugar and water in a pan and bring to the boil.
Allow to cool for 2 minutes.
Then add sieved flour and beaten eggs, and stir the mixture together, don’t worry if it looks like the mixture has curdled.
Divide the mixture equally between two greased 2lb loaf tins.
Bake for 1hr 50 mins on gas mark 3 on the lowest shelf of the oven.
