This is very similar to Manor House Cake or M&S Country Fruit Cake. Very Easy to make and I sometimes add a tablespoon of marmalade to ring the changes. You could also use demerara sugar if you like.
MethodRub the butter into the flour and add the sugar and fruit. Add eggs and beat with a wooden spoon until well mixed. Add milk to give dropping consistency if necessary. Transfer the mixture into the tin and sprinkle with granulated or demerara sugar.
