Granny's Fruitcake

This is very similar to Manor House Cake or M&S Country Fruit Cake. Very Easy to make and I sometimes add a tablespoon of marmalade to ring the changes. You could also use demerara sugar if you like.



8oz SR Flour Flour 8oz Granulated Sugar 2oz Sultanas 2oz Currants 2 tbls Mixed Peel(use cherries or extra sultanas if preferred) 4oz Butter 2 Eggs beaten 4 tbls Milk Sugar for topping 7inch round tin lined with parchment Gas 4 for 1 hour or until inserted skewer comes out clean.


Rub the butter into the flour and add the sugar and fruit. Add eggs and beat with a wooden spoon until well mixed. Add milk to give dropping consistency if necessary. Transfer the mixture into the tin and sprinkle with granulated or demerara sugar.
