Easy farmhouse fruit cake
This is also a good cake to cover with almond paste and icing if you don't want a rich fruit cake at Christmas etc. don't sprinkle with the sugar.
MethodPlace all the ingredients in a large bowl, beat together with a wooden spoon until well mixed.
Place into a lined round or square 8 cake tin and smooth top.
Sprinkle with demerara sugar
Bake at 300oF 150oC for 2 - 21/2 hours until cake feels firm when pressed or skewer comes out clean.
