Sprinkle with demerara sugar
Bake at 300oF 150oC for 2 - 21/2 hours until cake feels firm when pressed or skewer comes out clean.

Easy farmhouse fruit cake

This is also a good cake to cover with almond paste and icing if you don't want a rich fruit cake at Christmas etc. don't sprinkle with the sugar.
Ingredients
12oz self raising flour,1 1/2 teasp mixed spice,7 1/2oz dark brown sugar,7 1/2oz margarine,3 large eggs,18oz mixed fruit nuts and cherries (chopped),2 fl oz brandy & 5 fl oz milk mixed together,demerara sugar for sprinkling.,
Method
Place all the ingredients in a large bowl, beat together with a wooden spoon until well mixed.Place into a lined round or square 8 cake tin and smooth top.
Sprinkle with demerara sugar
Bake at 300oF 150oC for 2 - 21/2 hours until cake feels firm when pressed or skewer comes out clean.
