Dark Chocolate Truffle Cake

My daughter loves this cake.



For the cake,300g dark chocolate broken into pieces,140g unsalted butter,6 large eggs separated,55g caster sugar,For the ganache,200g dark chocolate broken into pieces,3 fl oz double cream,


Preheat oven to 160ºC
For the cake, melt choc in microwave for 4 mins on medium, cool, then whisk in the egg yolks.
In a separate bowl, whisk the egg whites until soft peaks and gradually whisk in the sugar until glossy.
Whisk half the egg whites into the choc mixture. Gently fold in the remaining egg whites.
Pour mixture into the prepared tin.
Bake for 30 mins, until it forms a crust. Remove from oven, leave to cool for 10 mins, then cover the top with foil and leave to cool completely in tin, preferably overnight.
To make the ganache, melt the choc, another 4 mins medium in microwave. Remove and whisk in the cream. Cool, stirring occasionally, until the mixture is thick enough to spread.
Turn the cake out onto a serving plate, then spread the ganache over the top and sides. Serve straightaway, using a hot knife to cut the cake evenly.
Delicious with fresh berries and a spoonful of crème fraîche. (I just serve with whipped double cream).
