Dairy Free Choc Chip Cookies

A truly wonderful dairy free cookie that is soft and delicious and a massive hit with everyone! This recipe uses Kara Dairy Free Coconut Milk. This is such an excellent new product! It has a mild sweet taste and it is not coconutty at all. Try it!
Ingredients
100g/4oz Dairy Free Margarine (Vitalite)
85g/3oz Soft Brown Sugar
2 Tbsp Golden Syrup
170g/6oz Self Raising Flour
100g/4oz Dairy Free Chocolate Chips
2 Tsp of Kara Dairy Free Milk
Method
Cream the margarine and sugar in a bowl until fluffy and pale then stir in the golden syrup. Add the flour slowly, bringing it together with your spoon until smooth. Add the chocolate chips or chopped dairy free chocolate and the milk and mix until well combined. Using a teaspoon, place balls of the mixture on a greased tray and put in the oven for 8-10 mins until golden. Leave the cookies for 5 minutes then gently remove them from the tray and place on a cooling rack or a clean kitchen towel.The cookies will appear quite soft but will firm up slightly when cool. Store in airtight container when cool. Eat within 2 days for best results- Bookmark with:
