'Cut and come again' cake

This isn't a rich cake so it's best eaten as fresh as possible.



12oz s.r. flour,1 tspn mixed spice,6oz soft margarine,6oz caster sugar,3 eggs,6oz sultanas,4oz currants or chopped nuts,4oz raisins,3 tbspns milk,


Pre-heat oven Mk4/180C.
Grease and base line a 20cm/8” round cake tin.
Measure all ingredients into a large bowl and beat well till thoroughly
Put into prepared tin and level the top.
Bake for about 1 – 11/4 hours [or till skewer comes out clean].
Leave to cool in tin for 10 mins. then turn out, peel off paper and cool on a wire rack.
