A lovely cupcake and so easy.
6oz self-raising flour,
1tsp baking powder,
6oz caster sugar,
2 eggs beaten,
1tsp vanilla extract,
Pre-heat oven to 160c fan oven or 180c for conventional oven. Blend flour, baking powder, sugar and marg in a food processor or with an electric whisk until it looks sandy, grainy. Add the eggs, vanilla extract and the milk. Beat together for 2-3mins until well combined. Place the mixture into 12 muffin cake cases and bake for around 20mins. Leave to cool. My favourite topping at the moment is 6oz icing sugar, 2oz butter and 2 tbsp of Baileys, Blend in a food processor until combined and top the cakes with the icing.
