Country Fruit Sponge

I always measure by ounces and grams. However, this is a quick recipe measured by one cup. It does not matter the size but as long as you use the same size of cup it will turn out fine.. All done by hand so no electric appliances to clean and get out of the cupboard. Cut into squares when cold. Can be iced, but I never bother. it is sweet enough.



1 cup sugar,1 cup sultanas,1 cup milk,2oz butter,2 cups SR flour,2 tsp mixed spice,1 beaten egg


Melt sugar, sultanas, milk and butter,
Cool slightly,
Mix in spice , egg and flour.
Pour into 7 inch square tin,
Bake for 35 minutes at GM4
