Coffee Walnut Cake

This is seriously easy and seriously delicious



6 oz sr flour.,6 oz caster sugar.,6 oz butter/marg.,3 eggs.,large handful walnut pieces.,3 teaspoons instant coffee dissolved in a little hot water.,A splurtful of milk (read on I'll explain).,,Butter .,Icing Sugar.,2 more teaspoons of the instant coffee mixture.


This is basically a mix together all in one Victoria Sponge and you all know how to do that so get on with it.

A splurtful - this is the word my 11 year old invented (3 at the time) basically it's a small dash, I would say a couple of tablespoons. I have found with a fan oven my cakes benefit from the extra moisture.

Put mix in two greased cake tins and bake centre oven for 20-25 mins at 180c. Test with skewer.
Cool on baking rack

For the butter icing I haven't given quantities but do to your own liking.

Sandwich together with icing and spread icing on top, sprinkle with walnut pieces.
