Coconut and lime loaf cake
A variation on lemon drizzle cake
4ozs SR flour
4ozs soft marg,
4ozs caster sugar,
1oz dessicated coconut,
1 lime zest grated and 2 tabsp juice
2 medium eggs beaten,
2 tabspn caster sugar,juice and rind of 1 lime,
Pre heat oven to 160C (fan) line 1lb loaf tin
Cream marg and sugar, add egg and finally fold in flour. Add lime rind and juice and coconut and mix gently.
Place in tin and bake for 45mins leave to cool for 5mins
Mix sugar and lime juice together in a small saucepan and warm gently or microwave gently. With a skewer pierce top of cake and drizzle lime and sugar mix over the top of the cake. Sprinkle coconut and lime rind over.
