Lovely for tea
Ingredients
For the base:,4 oz SR flour,3 oz butter,1 oz sugar,1 egg (beaten),Jam for spreading in the middle,Topping:,3 oz desicated coconut,3 oz sugar,1/2 oz butter,1 egg,1/2 tspn vanilla essence,
Method
Sift the flour and rub in the butter, add the sugar, stir in the beaten egg. Put this into a a baking tin and spread using the hands. Spread a layer of jam over this.For the topping, rub the butter into the coconut, add the sugar and vanilla essence, mix in the egg. Spread over the jam and bake at gas mark 4 for approximately 30 minutes. Cut into slices whilst still hot.
