Coconut cookies

Ingredients

,75g polenta,40g plain wholemeal flour,1/2 teaspoon baking powder,75g icing sugar,50g cubed butter,50g desiccated coconut,few drops vanilla essence,2 egg yolks,50g plain chocolate

Method

Grease and Line two baking trays
In a bowl mix polenta, flour, baking poweder and sugar.
Rub in butter until the mixture looks like breadcrumbs
Stir in coconut, vanilla and egg yolks
Firm into dough then roll into a sausage shape
Wrap in cling film and chill for 30 mins
Cut 'sausage' into 18 slices and place on trays
Bake in oven 180'C for 7-8 mins until golden
Leave to cool
Melt chocolate in microwave and then drizzle over cookies
