Coconut Chocolate Slices
Submitted by JamJar aka Chutney Queen 11 June 2009
Leave to cool before cutting into 10 bars. (I normally line tin with Bakewell paper, but this does make it rather awkward to press the coconut mixture evenly over the base) I fin this keeps happily in a tin (if you can leave it alone) for a week.
Ingredients
100g butter softened,Vanilla essence,200g. gran.sugar,250g. dessicated coconut,2 beaten eggs,100g. dark chocolate roughly chopped
Method
Cream butter, vanilla essence, sugar & coconut, then mix in eggs.Very well butter a shallow tin 7 x 10 and press in 1/2 the mixture.
Cover with chopped chocolate and then spread over the remaining mix, pressing down evenly and firmly.
Bake Fan 160C approx. 20 mnutes until golden.
