Christmas Welsh Cakes

An alternative to mince pies!



8oz SR flour, pinch of salt, 2oz block marg, 2oz butter, 2/3oz caster sugar, 2/3oz sultanas,finely chopped, 1 egg, beaten with a little milk, 1oz finely chopped red an green glacé cherries, pinch cinnamon.


Sift flour and salt into a bowl, rub in the butter and marg to make a fine crumb. Stir in the flour, fruit and cinnamon. Add egg and milk to mix to a soft dough. Turn out onto a floure surface and gently knead until you have a smooth dough. Roll out to 1/2" thickness and cut out with cutter. Add some fat to pan and cook the Welsh cakes until nice and golden. Serve either with a sprinkle of caster sugar or a smear of butter
