Lovely to serve alongside mince pies .
- 25g butter
- 25g light brown sugar
- 100g condensed milk
- 2tsp plain flour
- 150g mixed fruit and nuts eg flaked almonds, desiccated coconut, raisins, cranberries, hazelnuts, cherries, apricots whatever you fancy basically!
- chocolate for coating plain, milk or white
Pre heat oven to 160c fan or 180c conventional. Melt the butter and sugar in a non stick saucepan stirring until combined. Add the condensed milk and heat until just bubbling. Stir in the flour and beat until smooth. Stir in the fruit and nuts and mix to combine. Place teaspoons of the mixture onto lined baking trays. Flatten and bake for 10 to 12 minutes until golden brown at the edges. Leave to cool on the tray. When cool remove to a wire rack. When cool, melt the chocolate and spread a small amount on the flat side of the Florentines and leave the chocolate to set.
