Chocolate Mayonnaise Cake

Sounds odd, but mayo is made out of oil and eggs so this simply replaces the fat and eggs in a normal recipe. Makes a lovely moist cake, ideal with my chocolate fudge icing.
Ingredients
275g self raising flour, 225g caster sugar, 1 1/2tsp baking powder, 200g mayonnaise, 4 tbsp cocoa powder, 225ml boiling water
Method
With electric beaters, beat flour, sugar, baking powder and mayonnaise together well. It should resemble breadcrumbs. Mix cocoa powder with boiling water and stir throughly into flour mix until all lumps are gone. Pour into a lined 8" tin and bake at 180 degrees for around 1hr.Recipe images are not uploaded yet.
