Chocolate & courgette muffins

Good way to hide veg if you have fussy kids - but actually these are just lovely moist little chocolatey cakes, for fussy eaters or as a way to use up a glut of courgettes....!



280g SR flour Half teaspoon bicarbonate of soda 2 level teaspoons cinnamon 3 level tablespoons of cocoa 1 egg 140g brown sugar (light or dark) 60ml milk 2 teaspoons vanilla extract 90ml vegetable oil 340g finely grated courgette - only peel them if you are hiding veg from the kids - drain or dry with kitchen paper if they are very wet 100g chopped dark chocolate or choc drops (optional)


Mix dry ingredients in a large bowl. Mix wet ingredients in a jug. Add wet to dry & stir till just combined, will be lumpy but with no flour visible. Spoon into standard muffin cases - makes 11 or 12. Bake at 200 deg c (400 F, gas 6) for about 20 mins or until tops spring back when pressed. Can top with chocolate cream cheese frosting or butter cream with chocolate buttons on top.
