Chocolate & courgette muffins
Good way to hide veg if you have fussy kids - but actually these are just lovely moist little chocolatey cakes, for fussy eaters or as a way to use up a glut of courgettes....!
MethodMix dry ingredients in a large bowl. Mix wet ingredients in a jug. Add wet to dry & stir till just combined, will be lumpy but with no flour visible. Spoon into standard muffin cases - makes 11 or 12. Bake at 200 deg c (400 F, gas 6) for about 20 mins or until tops spring back when pressed. Can top with chocolate cream cheese frosting or butter cream with chocolate buttons on top.
