Chocolate-chestnut muffins

Ingredients

100 g dark chocolate,250g sweetened chestnut puree,100g soft butter,2 tbsp rum ,2 tbsp apricot jam,50g sugar [if the chestnut puree is very sweet use less],3 eggs divided,1 pinch of salt,50g flour,1 tsp baking powder ,,100 g dark chocolate,250g sweetened chestnut puree,100g soft butter,2 tbsp rum ,2 tbsp apricot jam,50g sugar (or more our chestnut purees are pretty sweet so you might have to adjust yours),3 eggs divided,1 pinch of salt,50g flour,1 tsp baking powder ,,,. ,,

Method


Mix the flour and baking powder.
Melt the chocolate and let it cool.
Beat in the chestnut puree, soft butter, rum, jam, sugar and egg yolks.
Whisk the egg whites with a pinch of salt until stiff.
Add a little to the chestnut-choc mixture and stir well, then add the rest of the whites carefully(!)
Stir in the flour and divide in muffin cups.
Bake at
175 °C for about 30 minutes.
Decorate with whipped cream and ground cinnamon or
with a simple icing from 1 egg white and icing sugar.
