Chocolate & Beetroot Brownies (Hugh Fearnley Whittingstall

3 medium eggs beaten,250g dark chocolate (70% or more),250g caster sugar,250g butter softened,250g cooked beetroot grated,150g self-raising flour


Grease and line a brownie tin. Melt the chocolate and butter in a bowl over a pan of simmering water. When everything has melted together, remove from the heat, mix together and add the sugar, eggs and grated beetroot. Fold the flour into the mixture to combine well, and bake in a medium-hot oven (gas 5 or 6) for 30-40 minutes. Allow to cool for a few minutes in the tin and turn out onto a wire tray to get completely cold. Cut into squares.
