Chocolate Beetroot cake

Sprinkle with icing sugar before serving



100g dark chocolate,3 eggs,280g sugar,8 floz sunflower oil,9oz cooked beetroot,1 oz cocoa powder,9oz plain flour,1 1/2 tsp baking powder,,


Wash and peel beetroot
Cook in boiling water till tender
Puree and allow to cool
Grease and line 9 inch cake tin
Melt chocolate, allow to cool slightly
Beat eggs with sugar and oil, gradually add beetroot
Stir in melted chocolate
Sift in cocoa powder, flour and baking powder
Mix well
Pour into tin
Bake for 1 hour at 180 c
Cool on rack
