Mix together cocoa, boiling water and half the melted butter and stir well. Add the sugar, egg, vanilla and the remaining butter. Next, sieve in the plain flour and baking powder and mix well. Then stir in the chocolate pieces. The mixture should look fudge-like and shiny. Pour into the tin and bake for 25-30 mins, or until the top is firm to the touch. Cut into nine squares and leave to cool in the tin.

Choc Chip Brownies

Serve either on their own or, to be wickedly indulgent, with a large scoop of vanilla ice cream.
Ingredients
55g cocoa powder; 50ml boiling water;1/2tsp vanilla essence; 85g unsalted butter melted; 225g caster sugar; 1 egg; 100g plain flour; 1/4tsp baking powder; ,100g plain chocolate broken into small chunks. ,
Method
Heat oven to 180 C or gas mark 4 and grease and line a 20cm(8) square cake tin.Mix together cocoa, boiling water and half the melted butter and stir well. Add the sugar, egg, vanilla and the remaining butter. Next, sieve in the plain flour and baking powder and mix well. Then stir in the chocolate pieces. The mixture should look fudge-like and shiny. Pour into the tin and bake for 25-30 mins, or until the top is firm to the touch. Cut into nine squares and leave to cool in the tin.
