Cheese polenta biscuits

125g plain wholemeal flour,75g butter cubed,2 tablespoons of polenta,100g cheese -crumbly type like caerphilly crumbled,50g fresh grated parmesan,50g ready to eat dried apricots chopped,1 egg yolk,


Sift flour into bowl and rub in butter until mixture looks like breadcrumbs
Sitr in polenta, cheeses and apricots
Add egg yolk and bring mixture together to make a ball
It will be crumbly but keep pressing it together
Roll into sausage shape (about 2 inches in diameter) and chill in fridge for 30 mins
Cut 'sausage' into 20 slices, place on baking tray and bake in the oven at 200'C for 10-12 mins till golden
