Cheese and Olive Loaf

Ingredients

150g self-raising flour - ,100g finely grated parmesan cheese - ,2 tbsp finely chopped mint leaves - ,1 tbsp chopped fresh oregano or I tsp dried - ,100g pitted black olives chopped -,100g ham chopped -,4 eggs beaten -,75g butter melted - ,1/2 tsp each ground black pepper and sea salt

Method

Preheat oven to 180C, and set a shelf in the middle of the oven. Lightly oil a loaf pan. Put flour, olives, cheese, ham, herbs and seasoning into a medium bowl, and mix well. Add eggs and butter, combine throughly. Pour into prepared pan and bake for approximately 35 minutes, or until golden brown and a skewer comes out clean when poked into the loaf. Cool in pan for about 10 minutes and unmould. Eat when warm, but it's also lovely cold OR lightly toasted the next day!
