Carroty Orange Muffins

I really loved these. They are like a lighter orangy version of carrot cake.



200 Plain Flour,150 Wholemeal Flour,pinch salt,1 TABLESPOON Baking Powder,125 Soft Brown Sugar,50g Ground Almonds,125 Buttermilk,2 beaten Eggs,1 Tsp Vanilla Essence,125g melted but cooled butter,200g Marmalade,350g Finely Grated Carrot,Extra Brown Sugar for crunch topping


Preheat the oven to 190. Sift both flours, baking powder and salt into a large bowl. Add sugar and almonds. Place Eggs, Vanilla, marmalade, milk and butter into another bowl and mix well. Add the liquid to the dry mix and stir briefly, then add the carrots. Mixture should look fairly orangy and lumpy too. Place the mixture into 12 muffin cases right to the top. Sprinkle with the extra brown sugar. Bake for 22 - 25 minutes.
