Carrot Cake (Good Food)
Good Food again
6oz light muscovado sugar,
175ml/6fl oz sunflower oil,
3 large eggs beaten,
5oz grated carrot (about 3 medium carrots),
grated zest of 1 orange,
1tsp bicarbonate of soda,
1tsp ground cinnamon,
½tsp grated nutmeg,
6oz icing sugar,
1-2tbsp orange juice,
Heat oven to 160C grease and line 8 square cake tin.
Place sugar into a large bowl pour in the oil and add the eggs. Lightly mix with a wooden spoon. Stir in the carrots, raisins and orange rind.
Mix flour, bicarb and spices, then sift into the bowl. Lightly mix all the ingredients. The mixture will be fairly soft and runny. Pour the mixture into the tin and bake for 40-45mins until firm and springy. Cool in the tin for 5 mins and turn it out. Beat the icing ingredients together place in a piping bag and draw lines over the cake when it is cold. Cut into squares.
