Bread Pudding

I adored bread pudding as a child and having tried and tested my mum's recipe I'm pleased to say it's as good as I remember!



350g White Bread - minus crusts,3/4 pint milk,50g veg suet,150g light soft brown sugar,1 tbsp mixed spice,2 eggs,275g mixed dried fruit,grated rind of a lemon,grated rind of an orange,nutmeg


Pre heat oven to 180*C/Gas 4 Break the bread into pieces & place into a bowl. Pour over the milk and leave to soak until the milk is absorbed. Grease 1.7lt dish. Beat the bread & milk mixture & add the suet, sugar, mixed spice & eggs & mix well. Stir in the fruit. Pour the mixture into the dish and grate over nutmeg. Bake for 1 - 1 1/4 hours until set and golden brown. Remove from dish and allow to cool on a wire rack. Enjoy!
