Blueberry Muffins
Submitted by Francisca 11 June 2009
Lovely muffins from a wonderful Dutch book only on Muffins.
Ingredients
300g flour,175g light brown sugar,1 tbspoon baking powder ,125g melted butter not hot,2 eggs,1,8dl milk,250 fresh blueberries or frozen (let them unfreeze before using),
Method
Warm up the oven to 180ºC. Coat the muffin tins with butter or put in some paper cups. Sieve the flour, add the baking powder and the sugar. In another bowl mix the butter, eggs and milk. Add the dry ingredients and mix loosely without mixing too much or else the muffins will be heavy, you must still see some lumps. Add the blueberries and fill the tins 3/4. Bake the muffins for more or less 20 minutes. Let them cool in the tins for 2 minutes and then take them out and let them cool off completely.Recipe images are not uploaded yet.
