Blueberry Muffins

For the muffin batter:,•3 oz butter,•6 tbls whole milk,•1 large egg,•1 large egg yolk,•¾ tsp vanilla extract,•8 oz plain flour,•6 oz sugar,•1½ tsp baking powder,•¾ tsp salt,•14 oz blueberries,,For the topping:,•1½ oz butter cut into ½ inch cubes,•2½ oz plain flour,•3 ½ tbls sugar,


1)\tPlace the shelf in the top half of the oven and pre-heat to 190?C.
2)\tMelt the butter on a moderate-low heat, remove from heat and whisk in the egg, yolk and vanilla until well combined (takes a while!).
3)\tMix together the flour, baking powder, sugar and salt in a bowl. Add the milk mixture and stir until just combined.
4)\tGently, but thoroughly, fold in the berries.
5)\tDivide the mixture into 12 greased muffin cases
6)\tRub together the topping ingredients and sprinkle over the batter.
7)\tBake until golden and crisp (until a wooden cocktail stick comes out clean) – 18 to 20 minutes.
8)\tCool for 15 mins, scrape a knife around the cases and carefully remove the muffins.
