Blackberry , & Apple cake.

Sometimes I put slices of apple on the top of the cake , & sprinkle with demerara sugar, just depends on how much apple I have to hand. I usec to chop the apples very small , but now I prefer the texture of the cake with apples grated on the coarsest grater.



6 ozs butter ,6 ozs Soft brown sugar,8 ozs SR flour,3 Large eggs.,Pinch of Baking powder,1Tsp Cinnamon,8 ozs Blackberries,8ozs Grated cooking apple.


I put the flour , soft butter , sugar, eggs , cinnamon , &baking powder in a bowl & mixed it all together with my hand mixer. Then I folded in the apple , & the blackberries. I had dusted the blackberries in a little flour. I always use an 8 round tin. bake on 180c for about 35 to 40 mins. I have a fan assisted oven.
